Lactic ferments are living microorganisms, such as bacteria, that play an important role in the production of dairy products such as yogurt and cheese. They consume the sugar found in milk and transform it into lactic acid, which contributes to the fermentation process and gives the final product its characteristic texture and taste. In short, they are microscopic “friends” that make our dairy products delicious and rich in probiotics, good for our gut health.
Rough fodder such as hay, food straw, in pasture, as well as concentrated feed which is produced on the farm (cereal seeds, oilseeds, etc.) or purchased.

Fodder and concentrated feed come primarily from the production zone of the Sèvre Dairy Cooperative and within the limits of the geographical zones defined by the AOP Chabichou.
Mandatory certifications
All animals are fed exclusively:
• GMO-free (since 1997).
• Palm oil free (since 2021).
• No urea.

Un raw milk goat cheese and pasteurized goat cheese are different due to the processing of the milk used to make them.
In raw milk goat cheese, the milk has not been heated to high temperatures to kill bacteria. This way, the natural bacteria present in the milk remain active. This can give the cheese a more pronounced and complex taste, with unique nuances coming from natural bacteria.
In contrast, in pasteurized goat's milk cheeses, the milk has been heated to a high temperature to kill bacteria. This helps ensure food safety by eliminating potentially dangerous microorganisms. However, it can also reduce the variety of flavors because the milk's natural bacteria are eliminated.

This charter, drawn up with care and rigor in 1997, guarantees not only high standards in milk production, but also exemplary traceability at each stage of the process.
We attach paramount importance to the well-being of our breeders and their herds. Thus, our producers adhere to animal-friendly breeding practices, promoting their health and comfort. This special attention is directly reflected in the quality of the milk produced.
Goat's milk products, such as raw milk goat's cheese, often offer an alternative for people with lactose intolerance, because goat's milk contains less lactose than cow's milk. Additionally, these products are often loved for their creamy texture and distinctive flavor profile.
Raw goat's milk cheese may not be suitable for all diets due to its composition. For example, people with a dairy sensitivity or goat's milk allergy should avoid these cheeses. Additionally, people following a strictly vegan diet will exclude goat's milk cheese of their diet due to their animal origin.
It is recommended to avoid giving raw goat's milk cheese to children under 5 years of age and pregnant women due to their sensitivity. We advise you to favor our pasteurized milk cheeses.

It comes from the Melle agricultural high school and is harvested by the students themselves!
It is a chestnut leaf which is placed under the cheese during its maturation. This traditional practice helps maintain humidity and develop the flavors of the cheese while giving it a beautiful rustic appearance.
