Goat's milk cheese, crottin

Crottin pasteurisé (raw milk)

This raw milk goat cheese is characterized by its thin beige, wavy and yeasty rind.
Le Crottin takes its name from the Berry term “crot” which means “hole”.

In the past, crots designated places located on the banks of rivers where laundry was washed. The clayey soil which made up these banks was used to make cheese molds in order to drain the curds.
