Caprifeuille Croquette

Ingredients

  • 200 g of natural Caprifeuille
  • 50 g grated cheese (such as parmesan or gruyere)
  • 1 clove of garlic (optional)
  • 1 tablespoon chopped chives
  • Salt and pepper
  • 2 eggs
  • 100 g of bread crumbs
  • 50 g flour
  • Oil for frying (sunflower or peanut oil)

Prep time

Prepare the cheese mixture

In a bowl, mash the goat cheese with a fork. (take it out of the fridge 20 minutes before)

Add the grated cheese, chives, and finely chopped garlic (if using).

Add salt and pepper to taste and mix well until smooth.

Form the croquettes

Shape the cheese mixture into small balls (about the size of a walnut).

Arrange them on a baking sheet and let them sit in the refrigerator for about 30 minutes to firm up.

Bread the croquettes

Prepare three plates: one with the flour, one with the beaten eggs, and one with the breadcrumbs.

Roll each cheese ball first in flour, then in beaten eggs, and finally in breadcrumbs to coat well.

Fry the croquettes

Heat oil in a deep frying pan or deep fryer.

When the oil is hot (about 170°C), add the croquettes and fry until golden and crispy, about 2-3 minutes.

Drain them on paper towels to remove excess oil.

Serve

Serve the croquettes hot, accompanied by a green salad or a sauce of your choice (such as a yogurt and herb sauce).
