CROTTIN CARAMEL WITH SALTED BUTTER AND NUTS

Ingredients

  • 4 raw milk goat's cheeses
  • 50g pecan nuts (or walnuts)
  • 50g sugar 
  • 30g of semi-salted butter from Beurrerie Echiré 
  • 10cl liquid cream
  • 1 tbsp. honey

Prep time

Lightly crush the nuts. Toast them in a pan over medium heat for 2 to 3 minutes. Toast them in a pan over medium heat for 2 to 3 minutes.

In a saucepan, melt the sugar over low heat without stirring until it turns an amber color.

Add the salted butter in pieces off the heat, then mix gently.

Pour in the liquid cream little by little while mixing. Leave to cool.

Preparation of the crottins: preheat the oven to 180°C then place the crottins in an ovenproof dish. Cover them with a teaspoon of honey.

Bake for 8 to 10 minutes, until lightly browned and soft in the center.

Place each hot crottin on a plate and drizzle with salted butter caramel and sprinkle with roasted nuts.
