Prepare in advance

Toast the 8 slices of sandwich bread and butter them lightly.

Cover 4 with sliced Chevrot cendré and ham cut into sandwich bread.

Add a second coat of Ash Chevrot.

Make a hole in the middle of the 4 remaining slices using a glass, and place them on the croque-madame.

Break an egg into the hole of the croque-madame and cook for 4 minutes in the oven at 200°C (thermostat 6-7).
