Watermelon, goat cheese & mint salad

Ingredients

– 1 small log Ashy Caprifolium Sèvre & Belle
– 2 nice slices of watermelon
– A handful of fresh mint
– 2 tbsp. pumpkin seeds
– The juice of 1/2 lemon
– 2 tbsp olive oil
– Salt and pepper to taste

Prepare in advance

Cut the watermelon into cubes of about 2 cm.

Cut the cheese into slices

Finely chop the mint

In a salad bowl, mix the watermelon cubes with the lemon juice, olive oil, a little salt and pepper.

Add the cheese, mint, then sprinkle with pumpkin seeds.
