Ingredients
– 4 large sweet onions
– 2 tbsp. sugar
– 2 tbsp balsamic vinegar
– 3 tbsp. of Beurrerie Echiré butter
– 1 roll of puff pastry
– 1 Caprifeuille log
– salt and pepper to taste
– optional: thyme

Peel and chop the onions.

In a frying pan, cook the butter over medium heat. Add the onions and a little salt. Sauté gently for about 10 minutes until tender.

Add the sugar and mix. Then add the balsamic vinegar and let caramelize for 5 minutes. Set aside.

Cut the Caprifeuille log into slices.

In a previously buttered pie dish, spread the caramelized onions then place the cheese on top.

Place the dough on top, tucking the edges inwards.

Bake the tart in an oven preheated to 180°C for 25 to 30 minutes.

Let stand for 5 minutes after cooking, then unmold by turning the tart over onto a pie plate.

Optional: sprinkle with thyme.
