Recipe cream of peas, Crottin Sevre & Belle and chives !

For 4 persons :

For the accompaniment :

Preparation :

  1. Chop the shallot.
  2. Mel the butter in a saucepan.
  3. When it is melted, add the shallot and brown them slightly.
  4. Then, wet the shallot with the chicken broth previously melted in 1 liter of hot water.
  5. Bring to the boil and drop the peas into the liquid.
  6. Simmer them for about 10 minutes.
  7. When the peas are cooked, reserve 4 tablespoons of peas.
  8. Then pour the remaining peas, the previously heated, the milk de nos Fermes Sèvre & Belle  and half the chicken broth into the bowl of a blender.
  9. Mix and adjust the consistency with yhe remaining cooking broth. Make it thicker or thinner depending on your taste.
  10. Serve hot or cold.

Au moment du service, ajoutez dans chaque bol une cuillère de petits pois, des miettes de Crottin Sèvre & Belle et une cuillère à soupe de ciboulette ciselée.

Just before serving, add a spoonful of peas, Crottin Sèvre & Belle crumbs and a tablespoon of chopped chives to each bowl.

You can accompany the velouté with a slice of toasted country bread with a slice of raw ham.
